Halving a recipe sounds like simple division — until you realize you also need to halve the "2 eggs," round "1.5 cloves of garlic" to something sane, and remember that baking time doesn't scale the same way volume does. Here's what to actually watch for.
When recipe scaling comes up
- Batch cooking or meal prep — tripling a weeknight recipe to freeze portions for later.
- Downsizing a family recipe written for 8 servings when you're cooking for 2.
- Catering or hosting — scaling a favorite recipe up to feed a much larger group.
- Adjusting for pan size — a recipe written for a 9-inch pan needs proportional adjustment for an 8-inch or 10-inch one.
What doesn't scale linearly
Most ingredients scale perfectly with simple multiplication — this calculator handles that instantly. But three things commonly don't:
- Leavening agents (baking soda, baking powder, yeast) — doubling a cake recipe doesn't always mean doubling the leavening exactly; too much can make baked goods taste bitter or collapse. For small scale changes it's usually fine, but for large multiples, professional bakers often scale leavening slightly less than 1:1.
- Salt and strong spices — flavor intensity doesn't always feel proportional to the eye; taste and adjust rather than trusting the math blindly for pungent ingredients like chili, garlic, or salt.
- Cooking and baking time — this is the big one. A doubled batch in a bigger pan often needs only slightly more time, not double, because heat penetration depends on thickness and pan size, not total volume. Use a thermometer or the usual doneness test rather than a scaled-up clock time.
A worked example
A pancake recipe for 4 servings calls for 2 cups flour, 1 cup milk, 2 eggs, and 1 tablespoon sugar. Scaling it up to feed 10 people gives a ratio of 10 ÷ 4 = 2.5×: that's 5 cups flour, 2.5 cups milk, 5 eggs, and 2.5 tablespoons sugar. The flour, milk, and sugar scale cleanly to usable measurements. The eggs land exactly on a whole number too, which is a lucky case — more often you'll get something like 4.5 or 5.3 eggs, at which point rounding to the nearest whole egg (see below) is the practical move rather than trying to crack a fraction of one.
Practical rounding
Real kitchens don't have "0.83 eggs." When scaling produces an awkward fraction, round to what you can actually measure — the nearest ¼ teaspoon, ⅛ cup, or whole egg — rather than chasing mathematical precision. For eggs specifically, if the scaled amount lands close to a whole number, round to it; if it's genuinely in between, a lightly beaten egg can be portioned by volume (about 3 tablespoons per egg) for more precision.

Should I scale the salt exactly like everything else?
As a starting point yes, but taste before serving — salt perception doesn't always scale as predictably as volume, especially for large batches.
Do I need to change my pan size when I scale a recipe?
Often yes, especially for baking — doubling a cake recipe in the same pan will overflow or bake unevenly. Match pan size to the new volume where possible, or use multiple pans.
What units does the scaler support?
